Karen’s Homemade Salsa

Last night, we did a little impromptu summer grilling.  We had tortilla chips to snack on, but I realized that I didn’t have any canned salsa in the pantry.  I had canned tomatoes and fresh cilantro that I’d picked up at the farmer’s market on Thursday, so I figured I would try and whip some up myself.

I was pleasantly surprised at how tasty it turned out and how quickly I was able to put it together.  I thought this was a must share for summer & a perfect quick & easy Meatless Monday recipe.

Ingredients:

  • 1 14-oz can organic diced tomatoes
  • 2 cloves garlic, minced (or 2 tsp minced garlic)
  • 1 cup fresh cilantro, loosely packed
  • 1 tsp red chili flakes
  • Lime juice (from 1/4 of small – medium lime)
  • Freshly ground pepper
  • Kosher salt, to taste

Add all ingredients to a blender or food processor.  Puree until desired consistency. Serve with tortilla chips & enjoy!

Easy Guacamole Recipe

Happy Monday!  Time for the vegetarian recipe of the week in honor of Meatless Monday!

Avocados are a great meat substitute due to their high protein content.  While the avocado does have a high fat content, the fat is not saturated.

Avocados are also packed with vitamins A, C, and E and loaded with dietary fiber.  In fact, they have one of the highest fiber contents of any fruit or vegetable.

I love eating fresh guacamole when I’m out to dinner at a Mexican restaurant.  And now, thanks to Real Simple magazine, I LOVE making it myself at home.  Try this recipe from Real Simple for a super easy & tasty guacamole.

Directions
  1. In a large bowl, combine the onion, jalapeño, cilantro, 3/4 teaspoon salt, and 1/2 teaspoon pepper. Using the back of a fork, mash the vegetables until they begin to release their juices.
  2. Add the avocados and lime juice and stir to combine.
    This recipe makes 2 cups.
